Chicken Fajita Lasagna

Cook Time: 50 mins


  • 410g  Chicken Breast, cut into strips
  • 1 Tin of Chopped Tomatoes
  • 3 Peppers Sliced (Red, Yellow and Green)
  • 1 Large Red Onion Sliced
  • 3 Herb Tortillas
  • Cumin
  • Cayenne Pepper
  • Paprika
  • Chopped Chillies
  • Garlic Powder
  • Basil
  • Fresh Coriander
  • Olive Oil
  • Mexicana Cheese
  • Grated Mozzarella


  1. In a bowl mix 1/4 cup of oil, cumin, paprika, cayenne pepper, chopped chilli, chopped coriander, garlic powder and basil
  2. Coat the chicken in the oil mixcof
  3. Fry until cooked through, and put in a separate bowlcof
  4. Using the oil and juices left by the chicken, fry the onion and peppers until slightly blackened
  5. Add cumin, cayenne pepper and chopped chillies and mix well with the onion and peppers
  6. Add the chicken back into the pan with the peppers and onion
  7. Add the tin of chopped tomatoes and cook until warmed through, taste and add more spice if needed
  8. In a square baking dish place a tortillas on the bottom and top with a third of the chicken mixture
  9. Layer with two shredded slices of mexicana cheese
  10. repeat until all the mixture is used up, top with grated cheese to cover the top layercof
  11. Cook on 180˚C for 25 mins until the cheese is bubbling and slightly browned

Tip: Serve with homemade garlic bread and chips
