Strawberry Lemonade White Choc Chip Cookies

Makes: 20 Cookies
Prep Time: 1.5 hours
Cook Time: 8 mins


  • 250g Plain White Flour
  • 1 tsp Cornflour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 100g Granulated Sugar
  • 100g Brown Sugar
  • Zest of 2 Lemons
  • 170g Unsalted Butter
  • 1 Large Egg
  • 150g White Chocolate Chips
  • 10 medium sized strawberries finely chopped


  1. In a bowl mix together the flour, baking soda, salt and cornflour
  2. In another bowl mix together the sugars and lemon zest
  3. Beat the butter until creamy and add to the sugar mixture
  4. Beat until you get a light and fluffy texture
  5. Beat in the egg
  6. Add in the flour mixture and mix until combined
  7. Fold in the strawberries and chocolate chips
  8. Chill the dough for an hour for best resultscookie dough mix
  9. Preheat the oven to 180ºC and line baking trays with baking paper
  10. Place rounded balls of the dough the size of golf ball on the baking tray
  11. Bake for about 8 mins until the edges have started to brown
  12. Leave to cool before moving to a wire rack as they will fall apartcookies up close
