Raspberry Glazed Herb Chicken

Serves: 2
Prep Time: 10 mins
Cook Time: 30 mins


  • 1 Teaspoon of dried Rosemary
  • 3/4 Teaspoon of dried Oregano
  • 1/2 Teaspoon of dried Basil
  • Pinch of Black Pepper
  • 2 Skinless and Boneless Chicken Breast Fillets
  • 2 Heaped Tablespoons of Raspberry preserve/jam
  • 1/4 Teaspoon of Honey Mustard
  • Handful of fresh Raspberries


  1. Preheat the oven to 180ºC
  2. Mix the herbs and pepper in a small bowl
  3. Rub one side of the chicken breast with the herb mixture
  4. Heat a frying pan big enough for the 2 breasts to a low to medium heat
  5. Place the chicken breasts on some baking paper and place in the frying pan
  6. Saute for about 4 mins on each side
  7. Transfer the chicken to a baking dish and put in the oven for 5 – 10 mins depending on thicknessChicken in baking dish
  8. While the chicken is cooking microwave/warm the preserve for 30 seconds to soften
  9. Mix the softened preserve with the mustard and a pinch of rosemary
  10. Take the chicken out and spread 1 tablespoon of the preserve mixture onto each breast
  11. Place back in the oven and cook for another 10 mins making sure no pink remains in the chicken.
  12. Remove and serve topped with the fresh raspberries and a side salad

Tip: If you are vegetarian/vegan you can substitute the chicken for a plant based alternative, such as a soya ‘chicken’ fillet or even a cauliflower steak
